The Virtues of the Pita – Part 4

the pita embraces diversity and braves new challenges.

Not only considering diversity as in how different are Morocco, Greece, Egypt, Israel, Algeria, Lebanon, and Tunisia – these different countries in the Mediterranean area that incorporate the pita into their meals – but, how about in terms of branching into entirely different and already established types of cuisine, such as Italian? Is the pita up to the task?

Absolutely.

Yes. You can make a cute, delicious, unbelievably affordable, 5-minute pizza with it and it looks and tastes just like a personal pizza you pay $10.95 for.

~Ingredients~

1 pita

shredded cheese. I happened to have monterey jack in the fridge and it worked perfectly.

(Goat cheese, feta cheese should work nicely too. Perhaps some olives!)

proscuitto, 3 slices

pasta sauce. I used one of my favorites, the Trader Joe’s vodka pasta sauce.

black pepper

any other Italian herbs

~directions~

  1. Spread a thin layer of sauce onto the pita (it can still be frozen – no problem) with the back of a spoon so that the layer is smooth.
  2. Sprinkle shredded cheese evenly on top
  3. shred the proscuitto into smaller pieces and spread on top of the cheese.
  4. sprinkle a little more cheese on top.
  5. grind black peppercorns and any other herbs on top.
  6. pop the pita into the toaster oven for 5 minutes (or until it is bubbling and melted satisfactorily)  at 400F. Depending on the shape that the pita (if it came straight from freezer) is, the center may take a little longer to heat all the way.

No one could guess that you didn’t just roll out the pizza dough yourself. You can’t tell at all! This would work great for a make-your-own pizza party – quick, and economical than mini pizza doughs.
