{not your ordinary breakfast} Cinnamon Roll Pancakes

I saw the idea for these on Pinterest and in the spirit of BlueBoots (see my updated About Me for details), I dove right in and had to see if they were too good to be true. They’re AMAZING! The brown sugar-cinnamon-vanilla combination cooked until it is lightly crispy, framing the just-right pancake, and covered with homemade icing drizzle just raised my happiness level several bars. But, with the amount of butter used, I can see why they taste so good – but still, I’m not going to make these often (for my health…of course).
