….and that’s why I bought him a Vitamix : Fresh Carrot Dreamsicle Juice

It’s juice!  A quick mid-week pick me up, coming right up!

I brought home a bag of groceries, including yogurt covered pretzels for me and a bag of baby carrots for him. A little sweet, salty, and crunchy.

I was making cilantro lime rice in the rice cooker, so we blended up some cilantro in the Vitamix to quick chop it. Naturally, some cilantro was plastered to the sides and in order to not waste it, B thought he would try something wacky out : make a juice with leftover cilantro.

Cilantro? Some people hate this herb, in fact.

Fresh herbs are very nutritious , more than lettuce, so it was a great and adventurous idea, for the skeptics among us.

Would the flavor be delicious or a reminder of savory meals past?? Before you read any further: it tasted really fresh and refreshing with a bright citrus opening. I like it!! 

Here’s the scoop:

Ingredients: 

  • 10 organic baby carrots
  • 1/4  cup of cilantro
  • one whole red gala apple
  • 8 ounces of orange juice
  • 4 ounces of water
  • one scoop of vanilla ice cream

Whizz in a blender. 

Strain the pulp out (even a fine mesh metal colander works) and serve as a juice.

That’s it. Simple.
