Who doesn’t love a fresh, flavorful way to enjoy summer’s veggies? I have to admit, zucchini isn’t at the top of my veggie loves list, because I’ve had the soggy, squeaky version many a time (NO more). I made these zucchini fritters on a day when I absolutely didn’t want to labor in the kitchen, and it was really, truly simple. Make this as a side, and you’ll be golden.
It’s been a little while since I’ve written a post, so I thought I’d keep the summer fun train going with this fun recipe I tried from @damndelicious. This uses an entire zucchini, serves 2 (can easily double or triple for a larger group). It is delicious. Zucchini Fritters is a good excuse to pick up a couple of zucchinis at your local farmer’s market.
FIRST//
Grate the zucchini and add salt. Leave to sit for 10 minutes if you have time, and then squeeze the water out by topping with a paper towel until water runs out.
SECOND//
Add the rest of the ingredients. Using quality parmesan to grate makes a big difference!
THIRD//
Fry these guys up (no additional pan oil needed) on medium heat until browned on each side.
FOURTH//
Top with your favorite topping. I post a few suggestions on my recipe pinnable above.
Got extas? Put into a freezer-safe ziploc bag and tightly seal. You can pull it out to reheat in the toaster oven or in the microwave for 30 sec-1 min!
