I made these to go in a Welcome, Baby Boy! Meal that I put together for a friend who just delivered this week.
In case you’re here for ideas, here’s what else I put in the goody bag, incidentally, vegetarian:
- loaf of pane rustico
- 2 fuji apples
- 2 mozzarella string cheese sticks
- French sparkling lemonade
- steamed broccoli with grated parmesan
- black beans+cherry tomato+spices+sweet onion+corn salad
- truffles: dark chocolate mocha & dark chocolate, peanut butter, salted caramel
- homemade basil pesto pasta
- plate of these muffins
- and this homemade, DIY card
I wanted these to walk the line between moist banana bread, and have the sweet cake taste that makes these a treat. Yum!
Ingredients
- 3/4 cup brown sugar
- 1 large brown egg
- 4 tablespoons flax seed
- 1/2 cup applesauce
- 1/2 cup unsalted butter
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3 ripe bananas
- 1.5 cup whole wheat flour
- 1/2 cup semi sweet chocolate chips
- 1/2 cup peanut butter chips *new at Trader Joe’s!*

I put the extra batter in this for a GIANT muffin/cake (compared to the regular size muffin, that is.

I had to sample it to determine if it was wonderful.
