I had 30 minutes before I had to leave for the gym (first workout of 2015, what what!) so this is what I made.
5 chicken breasts, tenders
1/4 onion, chopped
3 tablespoons Trader Joe’s creamed garlic
1/2 tablespoon Trader Joe’s taco mix spice blend
1/3 cup labneh – Mediterranean yogurt cheese (instead of sour cream or cream cheese….)
1 can organic black beans
1/3 cup chopped red pepper
Handful of fresh cilantro chopped
Freshly grated Wisconsin super sharp cheddar
Soft flour tortillas
Heat pan with garlic and onions. Cook chicken in the same pan. Take out to slice or shred into small pieces. It should take about 15 min. Add labneh and taco mix spices and put on low heat. Add the can of beans to heat and flavor. Use this time to prepare the toppings.
Then, layer on delicious toppings on heated flour tortillas, squeeze some lemon juice , fold it up and devour!
